The coconut and suji (rava) ladoos

food blog 142It’s been a long two weeks with the job to design the school lunch recipes for California School Complaints .To calculate all the nutritional information perfectly and give the right product which is based on the US school food rules and regulation for school children, was highly a challenge for me. It was great learning as well as satisfaction when my client gives his wonderful compliment.

Now I have just made the coconut and rava  laddoos to celebrate this success. This takes only 30 minutes to make but finish within 10 minutes. 🙂 You can make this to store the laddoos in refrigerator for one or two weeks.

Ingredients:

3 cups coconut crust
1 cup rava(suji)
2 &1/2 cup cane sugar
3-4 cardamom

Preparation:

  • Mix all the the ingredients in a pan.
  • Fry it on low flame till the mixture turn sticky and nice aroma comes
  • Mix well and take off from heat
  • Let it cool for some time
  • When the mixture is still warm and you are able to roll between your palms, take small portions of the mixture
  • Press nicely and round between your palms to make ladoos.

ravioli pasta made with my twist Ravioli

I am mad about pizzas.. and i love italian delicacies. So i was wondering if i could make a italian dish with my own twist. So i thought of making ravioli. Actually its a sweet ravioli . Let us make some sweet ravioli….;)

Ingredients:

(1) 2 cups of flour

(2) 1 egg

(3)Water

(4)Nut and chocolate mix ( the filling )

(5) 2 tbsp butter

(6) Sugar syrup

(7) Sliced bananas

MAKING PROCESS:

Step 1: First make two pasta sheets. To make them take two cups of all purpose flour and one egg and mix well to make a dough. Add water if needed. Then devide the dough into half and roll the dough out with a rolling pin. You can also use pasta machine to roll the dough out. The thickness of the pasta sheet should be such like that the outline of your hands can be seen…

How is this…to have homemade mango kulfi this summer…we had fun while making it… Make it and ENJOY… 🙂

Ingredients:

  • 2 cups milk (about 500 millilitres)
  • ¼ cup milk powder
  • ½ cup condensed milk (I used sweetened condensed milk)
  • ¼ cup sugar
  • 1 cup mango pulp

Preparation:

Combine all the ingredients except the mango pulp and condensed milk in a non-stick pan and mix well. Bring this mixture to a boil and then simmer for 10 minutes till thickens. Cool completely.

Add the Condensed milk and mango pulp and mix well.
Pour the icecream into individual kulfi moulds
Freeze till set. Or you can wait till its half set and place a icecream stick in the center of it (the half frozen cream will help the stick to hold it in place). Refrigerate again till completely set.

Unmold the Kulfi. And Kulfi Icecream is ready.

Tips

  • I had regular mangoes on hand. I took the pulp of about 2 mangoes and make 1 cup mango pulp
  • If you haven’t kulfi mould then you can use paper coffee cup and remember to freeze the cups for 20 minutes otherwise it will damaged while pouring the mixture.

This recipe is a traditional Bengali fish preparation. ‘Dahi’ means yogurt and ‘Katla’ is a fish. Fish used is the common freshwater fish. Choose a big fish weighing about 5 kg. Often the fishermen or women who sell these fishes do not expect you to buy the whole fish; therefore you can buy one kilo or 2 kg. For this preparation, you need to select portions from the stomach of the fish. I tried many kinds of Fish preparation, but this recipe is an excellent dish for my family as well as me. You can try this recipe with any white fish.

We all know fish is fully packed with protein, vitamins, and nutrients that can lower blood pressure and help reduce the risk of a heart attack or stroke. Another great thing is it’s a great source of calcium, phosphorus, and minerals. Being fully loaded with omega-3 fatty acids and B2 it can help you to increase your brain power as well.

Yogurt is also an excellent source of essential carbohydrates and a punch of protein. The protein needs for building muscles and also improves their natural functioning.Studies have shown that yogurt is also an excellent source of vitamin B12, vitamin B5, zinc, potassium, protein, and molybdenum.

So a fresh, delicious Non-Veg preparation is my current sharing recipe for you.

Ingredients:

Katla Fish (Big size 4 pcs.)
Curd 200gm.
Ginger Paste 1 tbsp.
Onion paste 4 tbsp.
Green Chili paste 1/2tbsp.
Tomato Puree 1 cup.
Bengal Gram Flour 1 tsp.
1 Bay leaf.
Red Chili Powder 2 tsp.(Kashmiri)
Cumin Powder 2tsp.
Turmeric powder 1 tsp.
Garam Masala 1/2 tsp.(only Cinnamon and Cardamom)
Raisins/Kishmish few.
salt to taste.
Sugar 1 tsp.
Oil as your requirement

Method:

Wash the fish finely first.
Add Salt, turmeric powder and marinate with 2 tablespoon of curd and set aside for sometimes.
Heat oil in a pan and stir the marinate fish till light brown.
Drain the excess oil.
To the remaining oil add bay leaf. Then add onion paste, ginger paste and green chili paste to it and stir well for a few minutes.
Mix curd, gram flour and tomato puree separately.
Add cumin powder and red chili powder and stir until the oil starts to separate.
Add salt. Be careful while adding salt. Because the fish has already been marinate with salt.
Add sugar, kishmish and garam masala.
Add a little water and cover with a lid for sometimes.
Serve.

The bael (Bengal quince, stone apple or wood apple) tree stand still for nearly 50 years in my in-laws house and tell me a story behind it. During mahasivratri or every Monday the bael patra (leaf) always in demand to worship God Shiva as our neighbour offer a bael patra to Lord Shiva. I am lucky enough to be surrounded by different type of trees and feel connected to the nature.

There are huge health benefits of bael . Bael fruit is not only a best of all laxatives but also cleans and tones up the intestines.  You can make this as a delightful summer drink .It will help you to beat the heat of summer as it known as an energy booster.

 

Bael Sherbet 1Ingredients:
Medium sized bael– 1
Powdered sugar – 2 tablespoons
Powdered black salt – 1/8 teaspoon

Roasted and powdered cumin seeds -1 teaspoon
Water – 1 to 2 glasses

Method:

Break open the fruit. Strike it against a hard platform till it splits open.

Using a spoon scoop the pulp and place in a large bowl. Pour a glass of water and using your palms gather and squish the pulp to separate the seeds.

Press the juice through a siever to strain the fibres and seeds from the pulp.

Add remaining water and other ingredients and stir it well. Chill it in the refrigerator.

Pour in tall glasses and serve.

Ingredients:

1 heaping tbsp almond flour

1 heaping tbsp unsweetened cocoa powder

1 tbsp almond milk (I used unsweetened vanilla)

1 tbsp chocolate chips

½ tbsp honey

1 egg

1 tsp vanilla extract

This recipe makes one serving.

Preparation:

It really is so tasty and simple! Mix all ingredients together in a mug and microwave for 1-1.5 minutes.

Serve hot and enjoy!

Yeast free Chicken Pizza Recipe

Pizza is one of the most popular and delicious dishes around the world. It is generally a flat round bread which is oven-baked and topped with tomatoes or a tomato-based sauce and mozzarella cheese. Toppings can be selected based on region, culture or personal taste or preference.

The basic steps in pizza making are first preparing dough, then the pizza sauce. My daughters are interested in cooking and they helped me a lot to make this Pizza. My daughters are gradually becoming the cooking expert. It’s a great fun to cook with your kids and make them conscious about their food choice.

Making Pizza Dough

Ingredients:

  • 1/2 cup – Warm milk
  • 1 cup curd
  • 2 cup flour
  • 1 1/2 Tsp. – Salt
  • 2 Tbsp. – Extra virgin olive oil /white oil
  • 1 Tbsp. – Sugar
  • 1 tsp baking powder
  • Extra flour
  • Extra olive oil

Method:

Pour the warm milk in a large mixing bowl, then add the sugar and dissolve it.

Now add all the remaining ingredients. Make sure the mixture is completely smooth. Use your hands to combine the dough until all of the dry flour has moistened into a mass.

When the flour has absorbed all of the moisture and congealed into a firm mass, remove it from the bowl to a floured tabletop to knead it

By using your rolling pin, make a  sheet .

Just as before, get that pizza stone preheating at 475 or 500 degrees F / 250 degree celcious for about an hour before baking pizzas.

Bake the pizza sheet for about 9-10 minutes.

Making Pizza Sauce (you can buy it from any super market, but I make it at home)

Ingredients:

  • 3 Tbsp. – Butter
  • 6 boiled tomato
  • 1 Tsp. – Salt
  • 3 Cloves – Garlic, minced
  • 1/4 Tsp. – Black Pepper
  • 1 Large – onions, minced
  • 1 Tsp. – Whole oregano

Method:

Make puree from the boiled tomato by using your mixer grinder.

Melt the butter in a large skillet. Now slowly sauté the garlic and onion. Then add the tomato puree, salt, pepper, oregano, basil. Boil it till make a thick sauce.Approx 10-15 minute.

Keep it aside.

Pizza Topping

Spoon the sauce on the baked sheet. Leave a small margin on the outer-side of the sheet

Now create a layer of the shredded cheese over the sauce. Shred about two cups of cheese. Arrange your toppings over this layer of cheese.

Add toppings according to your preference. I have used here, boiled chicken pieces, Grated Cheese,Tomato cut into pieces and onion cut into pieces.You can use the varieties types of capsicum and olive also.

Baking the Pizza

Preheat your oven up-to the temperature of 450° F for about 10 to 12 minutes. When preheating is done, place a prepped pizza in the oven at the centre.
